About six weeks ago, I began my gut healing protocol as prescribed by my new functional medicine doctor at Parsley Health. Starting with the elimination diet, I cut out gluten, dairy, and refined sugars. However, I also knowingly have negative reactions to corn, soy, and eggs, so those were out as well. As you can imagine eating at restaurants has been incredibly challenging and holiday gatherings are a bit, eh, unexciting since I can’t partake in all of the cheesy creamy goodness and holiday sweets (see my vegan cheesecake recipe that’s elimination diet friendly). I’ll survive, but damn, it’s teaching me some real discipline.
Hello, easy raw vegan cheesecake – This is the tastiest and dreamiest ‘cheesecake’ that also happens to be gluten, corn, and soy free. Even if you don’t have any dietary restrictions, this recipe is the bomb. It’s super easy to make, and it’s something fun and different to bring to family gatherings. Gotta keep ’em on their toes, you know.

This particular location (one of four!) is conveniently located above Whole Foods in Gowanus. I was definitely in plant lady heaven, and couldn’t stop smiling even if I tried. If you don’t already know, Gotham Greens is the urban farming pioneer growing and harvesting hyper-local, pesticide-free greens on rooftops. Every vegetable and herb is sustainably grown using 100% clean and renewable energy.

Although, we are all a little addicted to social media, we can wait jusssst a little longer to play catch up. Trust me. It has drastically improved my productivity in the morning.
