Healthy Cauliflower "Alfredo" Pasta Recipe

The boyfriend and I were painting the apartment all day Sunday, and we had no idea what to make for lunch. I basically only had cauliflower and spinach. Then, it dawned on me - I know how to make a healthy alfredo sauce using cauliflower! I'd been wanting to try it, and since fettuccine Alfredo is one of Andrew's favorite meals, I wanted to lure him from the Dark Side (it's healthier and cleaner over here).

Ingredients:

- 2 Garlic Cloves (sautéed in EVOO)

- 1/2 a head of Organic Cauliflower

- Handfuls of Organic Spinach

- Salt & Peppa to taste

- Brown Rice Noodles (or any healthy grainy noodles you prefer)

HOW TO: 

  • In one pot, boil water with your cauliflower until it is tender.

  • Sauté minced garlic in a frying pan with extra virgin olive oil, then set aside.

  • Next, boil your noodles.

  • While you are waiting for the noodles to cook, blend the cauliflower (I use the Nutri Bullet Pro) with 1/2 cup of water, and add in the garlic to blend.

  • Add salt and pepper to taste (and maybe a bit more EVOO), and pour it over your drained/cooked noodles.

  • Throw in handfuls of organic spinach and stir around.

  • Option to add a handful of freshly grated parmesan cheese.

That's it! It was SO delicious, and Andrew loved it! He is all about the buttery and cheesy Alfredo sauce, but he agreed this is a pretty darn good substitute.
